Main Divide Pinot Noir – A typical cool climate Pinot Noir from Waipara

DThe grapes for the Main Divide Pinot Noir come from different parcels. Depending on the degree of ripeness, the grapes were harvested at different stages in order to obtain a range of red and dark fruit flavours. Around 40% of the grapes were put into the fermentation vats as whole bunches, the rest was destemmed on top, keeping as many whole berries as possible. The vats were kept cool over the next few days to extract the soft, silky tannins from the skins of the Pinot Noir. After about a week, the natural fermentation of the must began. During fermentation, the skins of the grapes were gently tapped twice a day. Once fermentation was complete, the grape residue was left in the wine for up to a week to extract the various tannins that give the wine structure and depth. The exact duration of this period was determined by daily tastings. The wine was then gently pressed and put into French oak barriques (about 20% new) from selected Burgundian coopers. In the summer after the harvest, when the weather became warmer, the wine underwent a natural malolactic (secondary) fermentation. After 18 months of ageing in these barriques, the wine was finally bottled.

The Main Divide Pinot Noir is a versatile food companion. It harmonises well with poultry dishes. Try chicken, duck or turkey, whether grilled, roasted or braised. The lively acidity and fruity flavours of the wine complement the tender meat of the poultry. It is also a great accompaniment to game dishes such as saddle of venison or roast venison. Its fine tannins and fruity notes complement the intense flavour of game. The earthy and sometimes spicy flavours of Main Divide Pinot Noir harmonise perfectly with mushroom dishes.

A mushroom risotto, mushroom soup or a simple mushroom pan are excellent accompaniments. Pork dishes, especially those that are lightly smoked or grilled, also go well with this characterful red wine from New Zealand. Pulled pork, roast pork or pork fillet are good examples. Lamb has a natural intensity and goes well with the complex flavours of this New Zealand Pinot Noir.

Braised lamb chops or leg of lamb are delicious. Pasta dishes prepared with a rich tomato sauce or a cream sauce are a good choice. Think of dishes such as pasta with mushrooms, lasagne or fettuccine alfredo. But this New Zealand Pinot Noir also goes well with lighter fish dishes such as salmon or trout, especially when served with a light sauce based on citrus fruits or herbs.

This red wine from New Zealand can be paired with a variety of cheeses. Soft cheeses such as Brie or Camembert go well, as do semi-soft cheeses such as Gruyère. The tartaric acid cuts through the creaminess of the cheese.

Starters like smoked salmon, vegetable terrines or bruschetta with tomatoes and basil are perfect starters to a glass of this Pinot Noir. And even lightly spiced Asian dishes, such as Peking duck, dim sum or chicken with sweet and sour sauce, go well with this New Zealand wine.
