Actually, the history of the winery began back in 1922, the year Pere Montserrat i Font started making cava, the most famous sparkling wine from Spain. His son Pere Montserrat i SardĂ , a leading figure in the history of the cava industry, followed in his footsteps. He thoroughly modernized the winery in 1940 and was the first to use the name Conde de Valicourt. Since 1994, his son MartĂ­ Pere Montserrat continues the family tradition.

Conde de Valicourt is the smallest and most personal winery in Sant SadurnĂ­ d’Anoia, the cradle of cava wine in the hinterland of Barcelona. Its small size has allowed this winery to remain independent and creative over the years. MartĂ­ produces what he likes and what he himself likes to drink. Reflection on its own roots, respect for traditional craftsmanship and a lot of passion for cava are the basis for the high quality of the sparkling wines of this Spanish winery. A lot of dedication goes into each and every bottle of these top-class Spanish sparkling wines.

RIGOROUS QUANTITY LIMITATION AND  REGIONALITY

The voluntary and strict limitation of production maintains the quality and personality of the in-house cavas. In addition, there is respect for healthy raw materials and sufficient aging time of the wines. Only local grape varieties from the PenedĂ©s region are used to produce the sparkling wines. The first pressing of the grapes gives the “flower of the grape juice”. This is later subjected to a temperature-controlled fermentation. The subsequent second fermentation then takes place in the bottle, with the help of traditional shaking towers. At Conde de Valicourt, shaking is still done manually. And disgorging is also still done by hand, virtually in passing, without freezing the neck of the bottle. Thus, the temperature of the delicate sparkling wine is not altered. The aging process of the Cava wines is of particular importance. This lasts between 12 and 18 months for the young cava, 18 to 30 months, for the Reserve and 30 months and longer for the Gran Reserve. Conde de Valicourt wines are released only when they have completed their specific aging process. The results are unique cavas, elegant, vital, delicately perfumed, refined in flavor and persistently sparkling.
