The Cabernet Franc reference wine from Pillitteri

Cabernet Franc is one of Niagara’s characteristic grape varieties and this wine is an excellent example of how to make it a complex and ageing wine. 2010 was an extraordinary vintage for Cabernet Franc. A warm and dry autumn produced an intense sweetness and an intense taste of the grapes. The title “Riserva Famiglia” is awarded only to wines from the best vintages that have passed a strict tasting by a tasting commission. Made in the traditional Appassimento style, the grapes were first left on the vine to dry for 4 weeks after the traditional harvest date, before they were then dried on special racks by air circulation for 26 days. The wine was aged for 24 months in French oak barrels.
