Die besondere Verschmelzung von Frische und Ausdruck

Der Pegasus Bay Sauvignon Sémillon ist ein einzigartiger Ausdruck eines traditionellen weißen Bordeaux-Verschnitts. Diese weisse Cuvée besteht aus etwa 70% Sauvignon Blanc und 30% Semillon.

Beide Rebsorten wurden in mehreren Etappen geerntet. Der Zeitpunkt der Ernte wurde dabei so gewählt, dass die natürlichen Aromen der Trauben optimal zur Geltung kamen. Nach der Lese wurden beide Sorten getrennt vergoren. Der Sauvignon Blanc größtenteils in Edelstahl, um den reinen Fruchtcharakter zu erhalten. Der gesamte Semillon hingegen wurde in Eichenfässern fermentiert, um die Textur zu verbessern. Ein kleiner Prozentsatz des Sauvignon Blanc wurde zudem in neuen französischen Eichenfässern ausgebaut, um ihm zusätzliche Länge und Komplexität zu verleihen. Beide Weine wurden etwa 10 Monate auf ihren natürlichen Hefesedimenten (sur lie) gereift. Danach erfolgte das Verschneiden (Cuvetieren). Nach der Abfüllung reifte der Wein ein weiteres Jahr lang auf der Flasche, bevor er auf den Markt kam.

Der Pegasus Bay Sauvignon Sémillon betört mit einer ausdruckstarken, vielschichtigen Nase. Ein betörender Duft nach Zitrusfrüchten, Thymian und Bratapfel strömt aus dem Glas. Hinzu kommen Noten von Brennessel, Blüten und Rauch. Am Gaumen ist der Wein reichhaltig, mineralisch und gut strukturiert. Die Säure ist feingliedrig und erfrischend. Ein charaktervoller, harmonischer Wein, mundfüllend und komplex, mit einem lange anhaltenden Nachhall.

Wir empfehlen den Pegasus Bay Sauvignon Sémillon zu einem grünen Spargel-Salat oder Risotto mit Garnelen. Auch zu gebratenem Fischfilet mit Salatvariationen macht er sich hervorragend.
