An exotic fruit cocktail

The grapes for the Hill&Dale Sauvignon Blanc come from vineyards that grow at an altitude of 100 to 200 m on the cool slopes of Stellenbosch. These are either south-facing or located where sea breezes help reduce temperatures during the final stages of ripening. The vines grow on decomposed granite soils and Table Mountain sandstone. The grapes were harvested by hand between 4 and 11 February and vinified separately depending on the vineyard location. The cold fermentation took place in stainless steel tanks at a temperature between 14°C and 16°C and lasted 21 days.

In the nose of Hill& Dale Sauvignon Blanc you immediately have a whole abundance of tropical fruits, papaya and passion fruit, accompanied by gooseberries and yellow apples. Hints of fresh green herbs and flint are also visible. On the palate, the white wine is creamy and fresh at the same time, the acidity is crisp and well integrated. The expressive fruit continues animating. A real fun wine, especially on the terrace.

For us, the Hill& Dale Sauvignon Blanc as an aperitif is already great. However, it is also great as a food companion. Drink it with sausage platters with goat cheese, with cantaloupe melon with Parma ham, with pasta puttanesca or with spaghetti carbonara. He was also able to convince us with a ratatouille or pork chops.
