A profound, serious fun bringer

The grapes for this rich Pinot were gently harvested after manual harvesting and the berries were placed directly in open fermentation tanks, with the proportion of whole grapes being around 25 percent. Thanks to the unique felton Roads gravity cellar, this process was possible without mechanical pumping. The maceration, i.e. the soaking of the berries, took about 10 days. This was followed by fermentation with native yeasts. The must remained on the shells for a total of 23 days to achieve a perfect leaching of the color and tannins. Then it was pressed and the juice was led by gravity into the underground barrel cellars. The wine then spent 16 months in French oak barrels, with the proportion of new wood being 30 percent. The subsequent bottling of the finished red wine took place without fining and filtration.
