A genuine wine of origin from Maxwell

The Adelaide Hills wine region borders McLaren Vale and is home to many of Australia’s finest white wines, including Chardonnay. These hills offer elevated and cooler locations for viticulture, producing wines with good natural acidity, structure and elegance. After harvesting, the must is cooled, settled and fermented with yeast in stainless steel tanks. As soon as the fermentation activity subsided after a few days, the wine was transferred to barrels to stop the fermentation. For the next 8 months, the wine lees were stirred up once a week to make the wine softer and creamier and thus improve the mouthfeel. This technique is called “batonnage”. The wine was then aged for 10 months in French oak barrels.

The Adelaide Hills Chardonnay exudes delicate aromas of pear, grapefruit and citrus fruits, accompanied by floral tones and a hint of vanilla. Stirring up the yeast set has improved the texture and mouthfeel and increased the complexity of this Chardonnay. The white wine shows a large fruit length and skilful use of wood. A fine and superbly balanced Chardonnay that captures the essence of its origin from a cool climate. It is made for immediate enjoyment, but also has development potential for further years.
