The gentle cuddle

The Merlot sites, planted between 1987 and 1993, are located on gentle, north-east facing slopes. They grow between 160m and 230m above sea level on soils of decomposed granite and Table Mountain sandstone. The grapes were harvested by hand. The temperature-controlled fermentation took place at about 20 degrees Celsius in stainless steel tanks. After fermentation was complete, the various batches were transferred to a combination of French, American and Eastern European oak barrels, where they matured for an average of eleven months before being bottled and blended.

Fresh red raspberries and currants are seductively in the foreground at Hill&Dale Merlot, with hints of hazelnut and parsley. In the mouth, the Merlot presents itself full-bodied and unfolds a generous warmth with aromas of dark, ripe cherry, sweet plum and raspberry compote. A real cuddle of this Merlot, with a long fruity reverberation.

The Hill&Dale Merlot is in principle a very good meat companion. Our absolute favorites for pairing with this red wine, however, are pork with peanut flatbreads and soy sauce, braised mutton, grilled lamb chops and, if you get them from us, juicy, South African boerewors with plenty of coriander.
