Cabernet and Shiraz, a wild marriage

The grape material comes from vines that grow on soils of decomposed granite and Table Mountain sandstone. To avoid drought stress, drip irrigation was used. The manual harvest took place between February 22 and March 4. After squeezing the grapes and destemming, fermentation took place in closed stainless steel tanks with selected yeast strains and regular pumping at 22 to 24 degrees Celsius. Parts of the wine were aged in a combination of French, American and Eastern European oak barrels and vats for 11 months before being blended. To preserve the natural fruit aromas in the wine, no new oak was used.

And this is how the Cabernet Sauvignon Shiraz from Hill&Dale tastes

The juicy ripe sweetness of Hill&Dale Cabernet Sauvignon Shiraz of red and black fruits, such as mulberry, raspberry and plum jumps out of the glass, accompanied by fresh herbal spice and a hint of spicy oak wood. On the palate, the wine is full-bodied, with smooth tannin and good balance. Its lush fruitiness and fine spice are retained even in the long-lasting finish.
