Pegasus Bay Sauvignon Sémillon is a unique expression of a traditional white Bordeaux blend. This white blend is composed of about 70% Sauvignon Blanc and 30% Semillon.
Both grape varieties were harvested in several stages. The timing of the harvest was chosen so that the natural flavors of the grapes were optimally displayed. After harvesting, both varieties were fermented separately. Most of the Sauvignon Blanc was fermented in stainless steel to preserve the pure fruit character. All of the Semillon, on the other hand, was fermented in oak barrels to improve texture. A small percentage of the Sauvignon Blanc was also aged in new French oak barrels to add length and complexity. Both wines were aged for about 10 months on their natural lees sediments (sur lie). This was followed by blending (cuveting). After bottling, the wine was aged in bottle for another year before being released.
The Pegasus Bay Sauvignon Sémillon beguiles with an expressive, multilayered nose. A beguiling aroma of citrus, thyme and baked apple pours from the glass. There are also notes of nettle, flowers and smoke. On the palate, the wine is rich, mineral and well-structured. The acidity is delicate and refreshing. A wine full of character, harmonious, mouth-filling and complex, with a long-lasting finish.
